Has anyone ever made Profiteroles? I bet Lauren has, btw where has Lauren been?
Lauren posted the other day. Newinn and Mo haven't posted for months. A few years ago I think it was around the holidays Lauren and Mo were posting about some of the food they were going to make. I had just eaten lunch, but their posts were making me hungry.

I had just eaten lunch, but their posts were making me hungry. I seldom eat more than one meal per day, opting instead for protein replacement products during the day and evening. Dinner. That’s usually my only meal. And last evening that consisted of a ham sandwich 🥪. Eating my frozen fruit protein shake as I type this. Plus no ice cream or Twinkies or DingDongs. I guess I’ve become the Anti-Foodie…

Yes, I have made profiteroles many years ago. Filled them with vanilla custard. Don't fill them until you are ready to eat. Otherwise they will be soggy. The only thing I've been baking on occasion is bread. Just to hot to fire up the oven.

The only time I eat ice cream is in the summer months. I have yet to purchase any ice cream this year. My friend has been saying with aging and concerns of blood pressure, cholesterol, and AC1. the only thing left to eat is cardboard, protein shakes and another night of salad.

Ice cream is my favorite. Life without ice cream is sad indeed. I hate to inform you of this, but I was just a bit older than you when words like A1C and borderline sugar came into my vocabulary. You don’t want diabetes type 2, my friend. Have you been checked? Are you one of the lucky ones that can eat anything? I had borderline pre diabetes before I lost 60 pounds. Then I was good. Haven’t checked now since I gained 35 back. I should do a blood test.

Went to La Bonne Soupe, supposed to be the best French Onion Soup in the city. Here it is:
You can also see the escargot we ordered behind it. I wouldn't say it was the best French Onion Soup I ever tasted but it was up there. The whole meal was delicious.

Yum, that French Onion Soup looks delicious. It was sooooooo good Max! You have to try it if you're in the city. The place is called La Bonne Soupe. Not that expensive either.

A goad recipe for French onion soup comes from Julie Child. I only made it about 4-5 times. It takes an entire day to make it. Thus the reason why it's only on special occasions in the wintery months where I'm motivated to make it. From roasting beef bones to simmering the stock for about 5 hours with herbs. Follow with caramelizing onions ( As I recalled about 50-60 mins) deglazed with brandy/vermouth. Entire procedures takes over 7 hours. So a great bowl of onion soup with a thick slice of toasted bread loaded with melty Gruyere cheese is worth the price if you can find it.
