I love buffalo burgers, buffalo steak. But I never had quail, elk, rattlesnake, or alligator tail. Has anyone here tried quail, elk, rattlesnake, or alligator tail? If so... How did they taste?
Tastes like chicken!!!! I've had Buffalo Burger (actually Bison, as has already been accurately pointed out here), quail & elk...all good. Never rattlesnake or alligator tail. BTW...for the uninitiated, Rocky Mountain Oysters are bull testicles, sliced, breaded & deep-fried. Like anything that's been breaded & deep-fried, they take on the taste of whatever they're dipped in.

lol, I'm not sophisticated at all. I usually eat whatever's around. I happen to be friends with a few people who are "foodies" and I just tag along on their coattails.
Buckhorn Exchange looks delicious. I've never had buffalo steak before. I would try that. inger lives in Colorado. Maybe he can give it a try if he ever braves the big city.
Never had a bison steak (I hate calling them buffalo). Bison burgers are good, but I prefer beef. Elk burgers are absolutely delicious. Ruthie is afraid to eat either one. Apparently the only ungulates she will consume are cattle and swine. No goat, either, not even the milk… I love goat and sheep cheeses.

I may have said this somewhere else before, but I'll say it again. Definitely not a foodie, but a few years ago my son and I were in Indianapolis to see tge Colts play the Houston Texans. We're both Colts fans. Saturday evening before the game we were walking around town and decided to go see St. Elmo's Steak House, kind of a bucket list restaurant. Right outside the restaurant we literally almost ran into JJ Watt. I wasn't paying attention to where I was going and my son pulled me out of his way so I wouldn't bump into him. A huge human being. Anyway, we walked into the steak house to see how long the wait might be. The hostess asked if we had reservations. We said no. She asked how many of us in our party. We said two. Instead of saying it would be a 45 minute or hour wait, she pointed to the back of the room and said, "Go see that guy at the end of the bar, and he'll take you to your table." So we were seated immediately at the table JJ Watt had just vacated. Of course, our story is that we had JJ Watt kicked out of St. Elmo's so we could have the table. And we're sticking to it. lol. I have a lot of respect for JJ watt for how he helped the Houston area after Hurricane Harvey. But everyone knows he’s not a bigger star than the one and only Renfield. 😜 I wonder if there is a restaurant that has a dish named after Dwight Frye?

I've never been to any of those, and never will. You're obviously a very sophisticated "foodie"...I'm a sports bar kinda guy. That said...if you ever get to Denver, check out Buckhorn Exchange... www.buckhorn.com/

Elk burgers are terrific… I bought canned alligator for my dogs a couple times as a treat. They chowed down…

You’ve got to try it Max. I won’t say it’s the best duck I’ve ever had but it’s up there. I love Luger’s of course but we found that Wolfgangs in Manhattan (they have different locations) has about 95 percent the quality without all the hassle of getting a tough reservation and going all the way to Brooklyn. They have almost the same exact menu too as it was started a former Luger employee. We still go to Lugers sometimes but if we need steak in a pinch it’s usually Wolfgangs now. I have to try the chicken francese from Belmonte’s. That sounds delicious!
I will try it someday.
I've been craving Bamonte's chicken francese, stuffed mushrooms, and eggplant rollatini since yesterday when I mentioned their chicken francese. Wow, I didnt know that Wolfgang's was started a former Peter Luger employee.
Yup. Wolfgang's Steakhouse was founded in 2004 by Wolfgang Zwiener, the headwaiter at Peter Luger Steak House, with over 40 years of experience. We order the same Porterhouse for two, German Potatoes, Creamed Spinach, and Apple Strudel with extra Schlag that we order at Lugers. One time my friend even asked the waiter at Wolfgang's where the chocolate coins (they give them out at the end of your meal at Lugers) were. The waiter got upset and didn't answer.

I had to look Schlag up. I had no clue. I was familiar with it he Schlage Lock Company, but I thought they’re products, while highly rated in their field, might be a bit of a challenge to chew… 🤓

Ramp season is coming shortly at the end of March to early June. I adore those wild leeks. Great in making compound butter(for steaks/roasted chicken) or dehydrated to be used in many applications. Sauteed ramps in olive oil/butter added to omelets or pasta simply delicious. Will find them in farmers' market in the months ahead.

I'm not adventurous when it comes to game meats. Luckily friends didn't put me to the test of serving caribou for evening meals. Does anyone like aquavit? A strong liqueur with a taste of caraway. I like caraway but not in liqueur.

The duck at Francie was incredible again. A must go for anyone who dines in the city. I haven't had any food from Francie yet, but that duck looks absolutely delicious. I know the area, Francie is about 2 blocks away from one of my favorite restaurants (Peter Luger's). And, not that far away from one of my favorite Italian restaurants (Bamonte's).
Now, I'm dreaming about a day when I can have duck from Francie, steak from Peter Luger's, Chicken Francese from Belmonte's, then take the Williamsburg bridge over to Manhattan for Pizza at Lombardi's, all in the same day. Mmmmm. I made myself hungry and I just ate lunch. I adore the deliciousness of duck.
